La Condesa's owners Rubén Ortiz and David Santos met as co-workers at Rosa Mexicano, a Mexican restaurant on the Upper West Side, where they became friends and shared similar passions for Mexican food.

After many years of working at mentioned restaurant, Rubén was taken on an adventure with the former Executive Chef of Rosa Mexicano, Roberto Santibañez, who opened his first and very own restaurant Fonda in Park Slope. Ortiz worked alongside with Roberto during a two year period. This is where he met Jorge Galicia and formed a friendship.

Formerly employed at Restaurant Association on Wall Street and Reebok Sports Club NY as a sous-chef, Jorge became a mixologist for Fonda Restaurant, City Grill. In recognition of his superb and original mixed drinks, Galicia won the Tanteo
